An Egg-Cellent Quick & Cheap Meal

After my hopefully entertaining but kind of useless post about my “cake” last week, I decided to try to make a recipe that would be helpful for us broke college kids. That can be summed up in two words: cheap and easy. College students LOVE cheap and easy (the only thing better than that is free!)

I came across a basic recipe that you can make in-game called Fried Egg and Rice, and that’s exactly what it is. Does it get much easier than that?!

The first thing we’re going to do is make some instant white rice. This stuff is like the holy grail of cheap and easy eating. It’s ready in less than 10 minutes, and you can do SO much with it! I always keep a box handy, because you can come up with almost any recipe with it.IMG_3615

While the rice is fluffing up in the pot, now it’s time to make our fried egg. When cooking a fried egg, the pan you use is important!! Personally, a cast iron pan is always my go-to (for basically anything) but you can use a nonstick pan as well. I always use butter instead of oil too, but that’s personal preference. Heat up your pan so it’s decently hot, nut not scorching, and throw you butter or oil in to heat up. You should keep the pan at a medium heat; hot enough that the egg will sizzle when you crack it in, but not hot enough that it’s going to burn the bottom while the white remains too liquidy.

Even though fried eggs are easy to cook, it’s always easy to burn them, so make sure you’re watching your temperature. Even though I don’t eat eggs so I have no vested interest, I like to cook my fried eggs just until the whites are all cooked but the yolk is still super runny. If you don’t like a runny yolk, you can always put a lid over the pan while it’s cooking so the yolk firms up.

Now that the egg is done, we can transfer the rice to a bowl. Make sure all the water has been absorbed by the rice, and it’s nice and fluffy. Once the rice is in the bowl, gently place the fried egg on top, being careful not to prematurely break the yolk. On top, I sprinkled some salt, cracked black pepper, and parsley flakes so it would look ~fancy~.

And that’s it! I wasn’t lying when I said it was cheap and easy. I think this is a great meal to make as a quick breakfast or a late-night snack if you’re feeling hungry, because it takes no time at all and you probably already have the ingredients in your kitchen. Perfect for broke college students like us!

I was feeling a little under the weather this week, so I spared you all my usual nonsense for this week, but don’t worry, I’ll be back with a vengeance next time. What should I make??     It’s great how interesting and versatile this recipe is. Like you said you can make this for breakfast and if you get some other side you could even make it for dinner! Growing up my parents would make rice, beans and fry and egg if they had to whip up a quick dinner after work so this recipe is definitely one I will have to keep in mind. Great post!

    My dad loves eggs he literally eats it three times a day, so I will definitely attempt to do this for him. Instead of butter my family uses olive oil. Great post inspired me to try it with my dad.

  6. Great recipe! ALL college students has had cup noodles because they’re cheap and filling, and there really had been no substitute. But I might say this recipe would come close second in the time it takes preparing. Great Post!
